Beefy Southwestern Wrap

I was grocery shopping a few days ago when I got a hankering for wraps, so for lunch I decided to put them to the test. By throwing together some household ingredients, I came up with a lunch that is quick, easy and sure to please.

Beefy Southwestern WrapServes: 1Total time: about 15 minutesIngredients:3 or 4 ounces ground beef small onion, chopped tomato, diced cup canned black beans, drained cup chopped lettuce (preferably from a bag of mixed salad greens)1 wrap (I use whole wheat)Salad dressing

1. Heat a skillet over medium heat. Add beef and cook until browned, about 10 minutes. Break up meat while it cooks. After meat is halfway-browned, add onion and tomato; saut until onion is translucent, about 5 minutes. Remove from heat.

2. Place lettuce and beans along the diameter of the wrap. Pour over meat mixture and top with dressing. Fold in the two sides of the wrap perpendicular to the diameter you spread the meat and vegetables over. Keep those ends folded and take a third side and roll the wrap shut. If you like, cut down the middle to make two halves.
